Ingredients:

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, softened
  • 1/2 cup milk
  • 1 egg
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/4 cup currants or raisins
  • 1/4 cup candied peel (optional)
  • Powdered sugar for dusting

Instructions:

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

  2. In a large mixing bowl, combine the softened butter and granulated sugar. Cream them together until light and fluffy.

  3. Add the egg and vanilla extract to the mixture, and continue to beat until well combined.

  4. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.

  5. Gradually add the dry ingredients to the wet ingredients, alternating with milk. Mix until a soft dough forms.

  6. Fold in the currants or raisins and candied peel (if using) into the dough.

  7. On a floured surface, roll out the dough to about 1/2-inch thickness. Use a round cookie cutter or a glass to cut out individual tea cakes.

  8. Place the tea cakes on the prepared baking sheet and bake in the preheated oven for 12-15 minutes or until they turn lightly golden.

  9. Once baked, remove the tea cakes from the oven and transfer them to a wire rack to cool.

  10. Once cooled, dust the tops of the tea cakes with powdered sugar.

  11. Serve the English tea cakes with a cup of your favourite tea and enjoy!
